Abstract
A process for preparing cheese-base by concentrating milk in a manner known per se through ultrafiltration combined with diafiltration and evaporation, whereby the retentate from the ultrafiltration is inoculated with an acid culture before the evaporation and after evaporation acidifies to completion in packing. The process may be carried out during a normal working-day, and it ensures a high yield in the preparation of cheese.
