Abstract

A process for the preparation of gelatin from powdered bone, which consists in subjecting the powdered bone to a first treatment with an acid solution at a temperature below ambient temperature in order to solubilize the phosphates, and then to a second treatment with an acid solution at a temperature of between 60.degree. C. and 85.degree. C. in order to isolate a broth from which the gelatin is extracted. Type A gelatin with a gel strength of more than 300 blooms and a gelling time of less than 100 seconds.
