Compounds of the general formula: ##EQU1## Wherein: R is a member selected from the group consisting of --(CH.sub.2).sub.n --CO.sub.2 M, --(CH.sub.2).sub.n --NO.sub.3, --(CH.sub.2).sub.n --SO.sub.3 M, and --(CH.sub.2).sub.n --NH.sub.2 ; n is an integer from 1 to 4; and M is an alkali metal; are useful as water binders in a wide variety of compositions, especially food and cosmetic compositions.
