Abstract

An asparaginase enzyme derived from the fungi Basidiomycete, in particular the Basidiomycete is. A method for hydrolysing at least one of L-asparagine or L-glutamine. A method for reducing acrylamide formation in a substance comprising L-asparagine is also described.
