Abstract
A lactic acid-producing yeast mutant which is a mutant of a yeast prepared by introduction of a lactate dehydrogenase gene that results in lactic acid-producing ability, the mutant having, in a medium at pH 3, a lactic acid-producing ability equivalent to or higher than the lactic acid-producing ability of a parent strain of the mutant at a lactic acid fermentation optimum pH.
