Abstract

A polypeptide having &bgr;-fructofuranosidase activity is obtained by the expression of a microbial gene, which polypeptide contains the amino acid sequences of SEQ ID NO:1 and SEQ ID NO:2 in whole or in part as an amino acid sequence. This polypeptide is useful for producing fructofuranosyl transferred saccharides.
