Abstract

The present invention provides an enzymatic process for the preparation of an acetylated phospholipid from a lecithin by acetylating the lecithin in the presence of vinyl acetate and a catalyst comprising lipase from having 1,3-position specificity, separating the desired acetylated phospholipid.
