Abstract
The present invention relates to fatty acid 13-hydroperoxide lyase protein from guava (,) and the gene encoding the protein. Expression systems for recombinant guava 13-hydroperoxide lyase and methods of using recombinant guava 13-hydroperoxide lyase for the production of green notes are provided.
