Abstract

A composition for the freshness-preservation of foodstuffs is disclosed which comprises, as an active base a triglyceride of saturated fatty acids (I) corresponding to the following general formula: ##STR1## wherein: R.sup.1, R.sup.2 and R.sup.3 are the same or different, linear aliphatic hydrocarbon groups containing from 5 to 21 carbon atoms.
