Abstract

Novel compounds, D-glucosaccharoascorbic acid and a salt thereof, are disclosed. The compounds, which are prepared by treating 2-keto-D-glucaric acid or an 2,3-O-acetal or ketal thereof with an acid, show excellent antioxidant activities. The agent containing the D-glucosaccharoascorbic acid or a salt thereof prevents effectively deterioration of foodstuffs.
