A process for the production of a skimmed milk of reduced phosphate and calcium contents. A skimmed milk is acidified to a pH of from 5.2 to 6.0 and the acidified skimmed milk is passed over an anion exchanger.

Milk food process

The invention relates to caseinates of oligo-elements, such as chromium, cobalt, copper, tin, iron, magnesium, manganese, molybdenum, nickel, silicon, vanadium and zinc, containing, for n times 100 grams of casein, from 3 to 100 milli-ion-grams of M.sup.n+, where M represents the oligo-element(s) and n is an integer. The caseinates are prepared from casein by ion exchange in order to introduce the oligo-element(s) therein, followed by washing until a substantially constant composition is obtained. They may also be obtained from alkali metal caseinates. The caseinates of copper or iron may be used as a source of copper or iron with no catalytic activity on oxidation, particularly in infant and dietetic products.

Metal caseinates

A process for isolating a protein fraction from an aqueous solution or suspension containing the said fraction in admixture with other substances, which comprises subjecting the aqueous solution or suspension to ultrafiltration to obtain a retentate, diluting the retentate, subjecting the diluted retentate to at least one further ultrafiltration treatment and recovering a retentate containing the protein fraction.

Process for the recovery of proteins

An apparatus for carrying out the process for solubilizing a suspension of casein in powder form in an aqueous medium, the casein suspension containing at most 270 g of casein per liter of aqueous medium, which comprises leaving the casein suspension to age for at least 10 minutes, after which a solubilizing agent is progressively added to this suspension until a homogeneous solution is obtained. Application to acid casein, the solubilizing agent being an alkaline agent. Application to phosphocalcic and rennet caseins, the solubilizing agent being a calcium-complexing agent.
