A method is used in the production of principal products conveyed in plurality along a processing line, consisting of fish, poultry or other meat which contains, in addition to the principal products to be obtained, inedible components to be removed (removal components) and also contains edible by-products remaining on said removal components. The edible by-products remain on the removal components after removal. The method includes: loading a separating device with a batch of fish, poultry or other meat; separating the principal products of this batch from the removal components, comprising by-products, of said batch; separating the by-products from the removal components; producing a by-product brine from the by-products by comminuting the by-products and mixing with water and stabiliser; and injecting a defined quantity of the by-product brine into the principal products, wherein principal products and the by-products contained in the by-product brine come from the same batch.

Method and device for increasing the proportion of meat used in fish, poultry or other meat products

A conveying unit is designed and configured for automatically conveying fillet-like meat products, in particular fish fillets. The conveying unit has a first conveying element rotationally driven by a drive and a second conveying element rotationally driven by a drive, in transport direction of the meat products to be conveyed. The second conveying element is downstream of the first conveying element. The two conveying elements form a continuous transport path, along which different processing stations may be arranged. The first conveying element is a double belt with a gap running centrally and parallel to the transport direction, while the second conveying element is a segment chain which is triangular in cross-section. A method is also disclosed.

Conveying unit designed and configured for automatically conveying fillet-like meat products, in particular fish fillets, and method relating to same

A cutting apparatus for cutting an essentially V-shaped strip from meat products fed in a transport direction has a knife carrier to which two knife units are assigned. Each knife unit has a circular knife and a drive for rotationally driving the circular knife about a central axis of rotation. The two circular knives are set substantially in a V-shape to each other in a position enclosing an angle. An adjustable arrangement of the knife units provides for setting of the size of the angle. The offset of the two central axes of rotation to each other is equal to zero in the transport direction and the two knife units are adjustable exclusively synchronously with each other. A corresponding apparatus and method for cutting an essentially V-shaped strip from meat products fed in transport direction is also provided.

The two actuators are coupled so an adjusting movement of the first actuator is stopped by a coupling impact against the second actuator in a fixed trigger adjustment positions, which brings about an associated trigger position of the fish head abutment.

Apparatus for removing pin bones from fish fillets includes at least one pin bone removal device and a conveying device configured to convey the fish fillets past the at least one pin bone removal device. The pin bone removal device utilizes a rotationally driven profiled roller and a counter-bearing element. A clamping gap is formed between the rotationally driven profiled roller and the counter-bearing element. A control is configured to control a relative movement between the rotationally driven profiled roller and the counter-bearing element. The pin bone removal device is configured to grasp and remove the pin bones via tensile force from the fish fillets in the clamping gap.

An apparatus for the automated mechanical processing of pieces of meat conveyed in a row comprises a transporting device, a cutting device having a cutting head and a control device. The cutting device comprises a holding and guiding device on which the cutting head is movably arranged to execute separating cuts at an angle to the straight conveying direction along the straight movement path at a fixed guiding tilt angle (&#x3b1;). A transport belt forming a component of the transporting device and transporting the meat pieces in a lying manner passes continuously by the holding and guiding device. The cutting element which, for cutting, is formed by a rotationally driven circular blade limited at its height position over the transport belt. The control device correlates a velocity component (V) of the movement velocity of the cutting head, which velocity component of the movement is in conveying direction with the conveying velocity of the meat pieces in the conveying direction when executing the separating cuts. The apparatus is used in particular to skin fish fillets, wherein a tail end section is cut off of the fish fillet with a chamfer cut that generates a fillet end chamfered at a slant as an insertion aid for drawing in the skin to be removed into the draw-in gap of a skinning machine.

The invention relates to a device for trimming the surface of meat, in particular fish fillets, comprising a transporting element by means of which the products which are to be processed are conveyed continuously in the transporting direction T into the region of a knife head, also comprising an element for detecting the position of the products, as well as a knife head for trimming the products and a means of controlling the movement of the knife head in dependence on the information and data determined by the position-detecting element, the device being distinguished in that the knife head is designed for automatically executing free trimming cuts along the surface contour of the products. The invention also relates to an apparatus for processing meat using a device mentioned above, and to a corresponding surface-trimming method.

Apparatus and method for trimming the surface of meat as well as apparatus for processing meat having an apparatus for surface trimming

The invention relates to a device and a method for the automated processing of meat. Known devices comprise a transport element, a cutting element, a bearing layer for the cutting element, and at least one control and/or regulating device that is actively connected to the cutting element. According to known devices and methods, the meat is displaced onto or towards the bearing layer, before being cut and/or trimmed. Often, this leads to an accumulation of meat, interrupting the processing operation. The inventive threading element reliably ensures that the meat is lifted up before reaching the bearing layer and is guided onto the same.
