The invention relates to a method and device for producing portions from a strand (B), in particular for the production of sausages, comprising at least one pair of opposing clamps () that can be moved towards one another by actuating means, from an open position to a closed position in order to clamp the strand. Each clamp comprises clamping means () that can he maneuvered by the aforementioned actuating means () in order to clamp the strand onto a central strand segment, and subsequently to clamp the strand onto side strand segments on each side of the central segment.

Portioning method and device comprising particular clamps

The invention relates to a method and a device for the production of portions from at least one continuous strand of a food product, in particular for the production of meatballs. The machine comprises: an extrusion device which can deliver a continuous strand in a vertical direction, and a portioning device that includes at least one cutting system. The cutting system comprises cutting elements () which can be moved transversely to the vertical direction between an open position, in which the strand passes between the cutting elements, and a closed position for cutting the strand and forming portions of the food product. In addition, each cutting system comprises ejection means () for ejecting the forming portions downwards from the cutting elements. The ejection means include at least one lower channel () that is fluidly connected to a compressed fluid such that compressed fluid can be injected into the lower channel when the lower channel is in a closed position. The lower channel is formed in a body of the corresponding cutting element.

Method and machine for the production of portions, including means for ejecting said portions

This invention relates to a machine for shaping three-dimensional portions of food product, in particular meat, in particular for shaping portions of minced meat, provided with an interleaving paper applying device, as well as a corresponding paper applying device. The machine comprises a shaping device () with shaping cells () wherein are shaped portions (S) of food product, and a paper applying device () comprising an applying drum () provided with on its peripheral cylindrical surface () at least one paper applying system () in order to take and maintain papers () on its peripheral surface and apply them on the portions placed in the shaping cells. The machine also has drives the cells and applying drum in synchronism.
