It is intended to easily separate saponins from isoflavones extracted from starting soybeans thereby giving highly pure saponins at a high yield on an industrial scale. Saponins can be highly efficiently separated from isoflavones by performing multistage extraction under mild conditions such that malonyl isoflavone glycoside, from among isoflavones contained in the starting soybeans, is not converted into isoflavone glycoside, acetyl isoflavone glycoside or isoflavone aglycon. Thus, highly pure saponins can be obtained at a high yield on an industrial scale.

Process for producing soybean saponin-containing material

A flavonoid solubilization agent capable of highly solubilizing flavonoids such as isoflavone, baicalin, rutin and naringin whose solubility is generally low; and a method of effecting the above solubilization. Flavonoids can be solubilized by causing a flavonoid and soybean saponin and/or malonyl isoflavone glycoside to be co-present in an aqueous medium.

A method for producing a composition containing soluble isoflavones is described, which uses soybean materials as raw materials. The composition is obtained in a natural state without addition of solubilizing agents and chemical modification, and has high solubility under neutral to acidic conditions and good long-term stability under refrigeration. By removing the insoluble materials from the water-extract liquid of a soybean material having a pH value of 2-7 and a temperature of 0-17&#xb0; C., a composition containing isoflavones can be efficiently obtained with high solubility under neutral to acidic conditions and good stability under refrigeration.

Method for producing soluble composition containing isoflavones

The invention provides a beverage material having roasted soybean hypocotyls which are substantially free of soybean testae and at least one other member from the group of roasted soybean testae, roasted barley, roasted naked barley, roasted Job's-tears and green tea. The beverage material can be prepared using soybean hypocotyls substantially free of soybean testae with the material retaining active ingredients such as isoflavone and having a good flavor.
