The invention relates to a process for the treatment of animal skim milk and for the production of an infant formula base product from animal skim milk, which process is highly efficient and cost effective, as only membrane filtration techniques, such as microfiltration and ultrafiltration, are required. By carefully controlling the process parameters, a product is obtained in which most of the major components are within the desired range for an infant formula base product. The invention also relates to products obtainable by the process according to the invention.

Process for the humanization of animal skim milk and products obtained thereby

Claimed is the preparation of an infant formula base product, comprising: (a) microfiltration (ME) of animal skim milk over a membrane having a porosity of 0.10-0.35 micrometer and operating with a volume concentration factor of 1.5-8, resulting in a retentate (MFR) and a permeate (MFP); (b) ultrafiltration (UF) of the MEP originating from step (a) over a membrane having a molecular weight cut-off of at most 25 kDa and operating with a volume concentration factor of 1.5-8, resulting in a retentate (UFR) and a permeate fUEP); (c) combining the MFR from step (a) and the UFR from step (b), to obtain a defined casein/whey ratio. Alternatively, the product of step (a) is used as a protein source. Claimed is also a composition comprising 40-50 g casein, 30-40 g lactose and 5-16 g ash per 100 g dry weight.

Method for processing animal skim milk

The invention relates to a process for treating animal skim milk and sweet whey and/or acid whey, having: (a) ultrafiltration (UF1) of a first liquid composition including animal skim milk with 70-90 wt % casein and 10-30 wt % whey proteins, based on total protein, over a first ultrafiltration membrane having a molecular weight cut-off of 2.5-25 kDa using a volume concentration factor of 1.5-6 to obtain a retentate (UFR1) and a permeate (UFP1); (b) ultrafiltration (UF2) of a second liquid composition including sweet whey and/or acid whey over a second ultrafiltration membrane having a molecular weight cut-off of 2.5-25 kDa using a volume concentration factor of 2-15 to obtain a retentate (UFR2) and a permeate (UFP2); and (c) mixing the UF retentate originating from step (a) with the UF retentate originating from step (b) to obtain a mixture of UF retentates.

Process and system for preparing dry milk formula

A process and system is shown for obtaining a dry milk formula, having (a-i) ultrafiltration of an animal skim milk composition having 70-90 wt % casein and 10-30 wt % whey proteins, based on total protein, and (a-ii) ultrafiltration of an animal whey composition having 0-25 wt % casein and 75-100 wt % whey proteins, based on total protein; or (a-iii) ultrafiltration of a mixture of the compositions of (a-i) and (a-ii), (b) removing polyvalent ions from the UF permeate originating from step (a-i) and/or (a-ii) or (a-iii) to obtain at least one softened UF permeate; (c) combining the at least one softened UF permeate with a UF retentate to obtain a combined product; and (d) drying the combined product to obtain a dry milk formula.

Dry milk formula and method and system for preparing same

A process of producing a composition comprising at least two different proteins is disclosed, of which at least one is a coagulating protein, such as a casein and/or a caseinate, and at least one is an anti-coagulating protein, such as a leguminous protein (for example pea and/or soy) combined or not with whey protein, comprising the steps of: a) heat-sterilizing a first liquid component comprising the coagulating protein, b) heat-sterilizing a second liquid component comprising the anti-coagulating protein, and c) mixing the first component with the second component to obtain a mixture thereof. The obtained mixture is useful as a food constituent having reduced coagulation in the upper gastro-intestinal tract, more in particular in the stomach.
