A process for extracting phytochemicals from plants. The process generally comprises controllably slurrying a selected plant material in a volume, adding a selected enzyme the slurry while it is controllably agitated, then heating the controllably agitated slurry-enzyme mixture to a temperature from the range of 40&#xb0; C. to 110&#xb0; C., and then maintaining the slurry-enzyme mixture at that temperature for a selected period of time. The slurry is then separated into a solids fraction and a liquids fraction that contains extracted phytochemicals. The liquids fraction is controllably de-watered to produce a fluid extract concentrate. The liquids fraction may optionally be dried to produce a dried extract concentrate. Suitable enzymes for use with this process include &#x3b1;-amylases, &#x3b2;-amylases, endo-&#x3b2;-1,4-glucanases, cellobiohydrolases, cellulases, hemicellulases, &#x3b2;-glucosidases, &#x3b2;-xylosidases, xylanases, pullulases, esterases and mixtures thereof.

Extraction of phytochemicals by enzymatic hydrolysis

The invention provides a process for reducing odour, bitterness, astringency and pungency of a Simmondsins extract by dissolving the Simmondsins extract in a solvent if the Simmondsins extract is in a dry form, reacting the liquid Simmondsins extract with a carbonaceous adsorbent, such as activated carbon, to obtain a mixture, separating the adsorbent from the mixture to obtain a purified liquid extract, and drying the purified liquid extract. The invention also provides a process for preparing a Simmondsins extract having reduced odour, bitterness, astringency and pungency by eluting plant material containing Simmondsins with a polar organic solvent to dissolve the Simmondsins, separating the eluent containing the Simmondsins and the solvent from the plant material to obtain a dilute crude Simmondsins extract, concentrating the crude Simmondsins extract, removing any oils from the concentrated crude Simmondsins extract, and then carrying out the steps for reducing odour, bitterness, astringency and pungency of extract as above. The invention also provides a feed containing a Simmondsins extract having reduced odour, bitterness, astringency and pungency.

Methods and apparatus for recovering zein from substrates are disclosed. The method includes extracting a zein-containing substrate such as whole corn with ethanol to yield a crude zein alcoholic dispersion and treating this dispersion with an adsorbent to remove at least one of starch, color or oil to yield a purified zein which is subsequently recovered or used in industrial applications. A preferred adsorbent is activated charcoal.

Zein is recovered from gluten meal prepared by wet milling procedures by washing the gluten with clean water to remove water-soluble components; separating the water-soluble components and recovering the water-insoluble components; extracting the water insoluble components with hydrous ethanol solvent to extract zein; recovering the crude zein extract; treating the crude zein extract with an adsorbent that adsorbs at least one of color, odor, oil and fatty acid; and to yield a purified zein extract.
