A process for the extrusion of a composition from an extruder, which composition is suitable for use in a food product, is disclosed. The process provides a composition which is comprised of a hydrophilicized carrier and surface-active compound which is extruded. The process describes adding the surface-active compound after the carrier is hydrophilicized.

Extruded compositions suitable for use in food products and processes of making thereof

Compositions in powder form of sterols or stanol esters, and milk powder and/or proteins are disclosed. A process of making the compositions is also disclosed. The suitability of incorporation of the compositions in powder form in food products, for example beverages and milk products, is also disclosed.

The present invention relates to a method for working up a mixture which contains esters of EPA and/or DHA with monohydric alcohols having 1 to 6 carbon atoms, esters of other fatty acids with monohydric alcohols having 1 to 6 carbon atoms, and free cholesterol, wherein the method comprises adding a transesterification catalyst to the mixture, converting at least some of the free cholesterol into esterified cholesterol and thereafter distilling the mixture, wherein the distillation is carried out in such a manner that a product is obtained which contains EPA and/or DHA, both in the form of esters thereof with monohydric alcohols having 1 to 6 carbon atoms, in a higher relative amount, based on all fatty acids in free or bound form present in the product, than said mixture. In addition, the present invention relates to a product which is obtainable by the method according to the invention, wherein the product contains 10 to 99.99% by weight of esters of EPA and/or of DHA with monohydric alcohols having 1 to 6 carbon atoms and 0.0001 to a maximum of 0.3 % by weight of cholesterol in free or bound form.

Process for the distillation of fatty acid esters

The present invention relates to a composition containing a first component selected from the group consisting of at least one polyphenol, at least one phenolic diterpene and combinations thereof, (b) at least one glyceride, (c) at least one hydrophilic emulsifier, and (d) at least one hydrophobic emulsifier. Also disclosed is the use of this composition as a lipophilic antioxidant.

The invention relates to a wet grinding method for producing sterol formulations having good wettability. According to said method, a) an additive selected from the group consisting of proteins, proteinaceous adjuvants, carbohydrates, cellulose derivatives, sugar alcohols, fruit concentrates and vegetable concentrates is dissolved or dispersed in water or in an aqueous suspension medium, b) sterol and/or stanol particles having a median particle size of at least 1 mm are added to this solution/dispersion, c) the dispersion thus obtained is homogenized and size-reduced in a mill that works according to the rotor/stator principle, and d) is then optionally dried, with the proviso that the sterol and/or stanol particles are present in the final formulation with a particle size distribution of Dof not more than 50 &#x3bc;m. Owing to their good wettability, the sterol-containing formulations produced according to this method can be incorporated into food items without complex technology and have good organoleptic and sensory properties especially when used in drinks and dairy products.

Method for producing sterol formulations

The invention relates to aqueous dispersions containing (a) 5 to 50% by weight of sterols and/or stanols; and (b) 0.5 to 20% by weight of citric acid esters of mono- and/or diglycerides, based on the total weight of the dispersion, wherein the citric acid esters of mono- and/or diglycerides are partially neutralised; and to a process for the production of an aqueous sterol/stanol-containing dispersion, which process comprises (a) dissolving citric acid esters of mono- and/or diglycerides that are partly neutralised, in water; (b) dispersing sterols and/or stanols in the emulsifier solution to form a pre-dispersion; and (c) grinding the pre-dispersion in a ball-mill until the dispersion has a particle mass diameter, d, of less than 5 &#x3bc;m. The invention relates to solids dispersions in the form of a solid solution containing a) at least about 0.1% by weight of sterols and/or stanols and/or esters thereof, and b) at least about 50% by weight of sugars and/or sugar alcohols, based on the total weight of the solids dispersion. These solids dispersions provide for simple further processing of the hydrophobic sterols and stanols, and sterol or stanol esters, through improved dispersion behavior in foods, and are distinguished by excellent stability upon storage.
