A method and apparatus for producing baked products such as sponge cake and crepe sheet for wrapping jam, cream or the similar filling. A sponge cake batter or a crepe batter therefor comprises a starch hydrolysate, a water-soluble thickening agent and/or gluten, in addition to conventional basic raw materials. The batter is treated on a baking roller comprising a stationary tubular body of a magnetic material, an exciting coil body arranged on the stationary tubular body and a rotatable outer hollow cylindrical member of a magnetic material.

Method for producing baked products

Disclosed is an apparatus for cracking the husks of nuts comprising a cylindrical rotor having a plurality of cracking projections on its circumference, a semicircular suspension stator having a plurality of cracking projections on its inner surface, the stator being positioned against a corresponding sector of the cylindrical rotor with a downward decreasing gap left between the stator and the rotor, and a hopper with an opening at the bottom for dispensing nuts to the gap between the stator and the rotor. The nutcracker according to the present invention permits simultaneous cracking of nuts of different sizes at an increased efficiency.

Apparatus for cracking the husks of nuts

A method for manufacturing a deaerated fatty confectionaries, specifically, chocolate blocks, chocolate blocks with a confectionary center, chocolate covered products, white chocolate or colored chocolate blocks, and the like, having a substantially reduced air content without requiring excessive shaking. In accordance with the invention, the fatty confectionary mass in a fluidal state and flowing in the form of a film is subjected to a reduced pressure, preferably, within a range of 10 to 350 Torr. Tempering can be carried out either prior to, during, or subsequent to the deaerating treatment. The deaerated mass can then be used for manufacturing chocolate products by molding, shell-molding, or covering.

A fleecy confectionery producing machine for extruding confectionery material into continuous viscous fibers which comprises a confectionery extruding mechanism including a rotary extruding cylindrical member having extruding through holes and a melting chamber and an integral cylindrical portion formed therein, a stationary cylindrical member positioned within said cylindrical portion in coaxial therewith and an exciting coil interposed between said cylindrical portion and stationary cylindrical member; a confectionery receiving chamber for receiving extruded confectionery from said extruding mechanism; a gaseous body suction chamber positioned below said receiving chamber, conveyer means for carrying said extruded confectionery, rolling means for levelling said extruded confectionery and a cutter for cutting said extruded confectionery to a predetermined size.

Fleecy confectionery producing machine

The nut cracking apparatus includes a conveyor comprised of a plurality of parallel slats connected to endless chains for intermittent movement from a hopper to a nut gripping and cracking apparatus. Each slat is provided with a row of openings extending therethrough for receiving nuts from the hopper and an underlying support is provided to retain the nuts in the openings until each slat is moved in sequence to a plurality of cracking apparatus. Each nut is located between an upper and lower nut gripping block each of which has a recess therein with a slot in the bottom thereof. The lower nut gripping block is spring biased on a fixed blade to normally have the blade retracted out of the recess. The upper nut gripping block is spring biased on an opposed blade which in turn is connected to the piston of an hydraulically operated piston and cylinder device. The upper nut gripping block is normally biased so that the blade is withdrawn from the recess. Upon lowering of the upper blade toward the lower blade a nut is gripped between the upper and lower blocks and continued downward movement of the blade will cause the upper and lower blades to penetrate into the recesses to cut the shell of the nut into two pieces without damaging the kernel of the nut. A blade position sensing device is provided for limiting the travel of the blade and upon cutting the shell into two pieces, the upper blade is retracted and the upper and lower nut gripping blocks are spring biased back to their normal position. Upon the next stepwise movement of the belt, the slat is moved to a position whereby the shell pieces will drop from the openings in the slat to a container.
