Provided are a liquid seasoning in which degradation of taste and flavor due to storage is suppressed, and a method of producing the same. The method of producing a liquid seasoning comprises the following steps (1), (2), and (3): (1) at a temperature of 80&#xb0; C. or less, adding an aqueous solution of at least one selected from the group consisting of ascorbic acid, hydroxyacid, and salts thereof to a fat or oil and stirring the mixture; (2) bringing the fat or oil after the step (1) into contact with water vapor under reduced pressure; and (3) bringing the fat or oil obtained in the step (2) as an oil phase component into contact with an aqueous phase.

The present invention relates to a process for producing oils and fats rich in diacylglycerol by subjecting fatty acids which are obtainable by hydrolyzing raw material oils and fats, to esterification with glycerin, wherein the process comprises decreasing an anisidine value of greater than 6 of the raw material oils and fats or reaction intermediates, by 20% or more. By using the process of the present invention, even in the case of using a raw material having an anisidine value which is likely to increase in the production processes for raw material oils and fats or for oils and fats rich in diacylglycerol, the stability of the final product oils and fats rich in diacylglycerol is enhanced, and coloration is suppressed, so that products having excellent external appearance can be obtained.

Process for producing oil and fat rich in diacylglycerol

Provided is a process for preparing an immobilized enzyme, which comprises the steps of immobilizing an enzyme used for decomposing oil & fat on a carrier, by adsorption, without drying, bringing the immobilized enzyme into contact with a fatty acid triglyceride or fatty acid partial glyceride, or mixtures thereof, and adjusting the moisture content of the enzyme to 5% to 50% by weight based on the weight of the carrier, wherein the enzyme is used for esterification.

A method for producing a diacylglycerol-rich fat or oil is provided. This method includes the steps of reacting an acyl group donor with an acyl group receptor, and separating unreacted material and byproducts by distillation for use as a part of the starting material in the subsequent cycle of production. Provided is a preparation process of diglycerides which comprises reacting a fatty acid or lower alkyl ester thereof with glycerin in the presence of an immobilized partial glyceride lipase while removing water, which is generated upon reaction, out of the system.
