Apparatus for high speed grilling and/or conditioning of a food product which comprises: a heatable surface which is capable caramelizing the food product at a temperature in the range between about 425.degree. F. to 575.degree. F.; a chamber for enclosing the food product on the heatable surface under pressure; and a steam injector for introducing steam into the chamber during the caramelization of the food product.

Method for conditioning food products

A food warming device having a bin for holding food products. The bin has an air delivery port and an air intake port located at first and second end walls that are disposed at first and second opposite edges of the bottom portion. The regions above the bottom portion and along the third and fourth opposite edges between the first and second walls are substantially open whereby the food products are clearly visible to customers. The bottom portion has a heated surface for receiving food products to be warmed. An air circulating means forms a stream of circulating heated air that moves from the air delivery port over the heated surface to the air intake port. The food products are warmed by heat emanating from the heated surface and by warm air from the stream of circulating heated air. A balancing system maintains the circulating air in balance by diverting a portion of the return air to ambient atmosphere through a bleed exhaust port.

Device and method for keeping food warm

A conveyor bun griller having a textured low-friction conveyor belt surface. This surface has more friction than an untextured low-friction surface, thus permitting the buns to be grilled without aesthetically undesirable markings, but also without creating handling problems for users of the griller.

Apparatus and system for conditioning food products

A cooking apparatus for automatically cooking and rotating a food product which comprises: a cooking chamber; a planetary assembly disposed within the cooking chamber which is capable of rotating the food product about the cooking chamber; a heater or burner disposed within the cooking chamber for cooking the food product; a venting damper disposed within the cooking chamber which is capable of releasing excess energy contained within the cooking chamber; a temperature sensor used for detecting the temperature in the cooking chamber; and a microprocessor which is capable of cooking the food product for a predetermined cooking time and maintaining the temperature in the cooking chamber in accordance with a predetermined cooking temperature by means of controlling the heater or burner and the venting damper such that the heater or burner remains in the 'on' position during the entire cooking time while the venting damper is opened and closed as necessary to maintain the predetermined cooking temperature.
