A process is disclosed for producing orotic acid, the process involves culturing in a medium a microorganism of the genus Corynebacterium which is capable of producing orotic acid and has resistance to a pyrimidine analogue or to both a pyrimidine analogue and a sulfa drug, until orotic acid is accumulated in the culture, and recovering orotic acid therefrom.

Menaquinone-4 is produced by cultivating in culture media a microorganism belonging to the genus Corynebacterium Arthrobactor, Brevibacterium, Microbacterium, Cutobacterium, Auteobacterium or Flavobacterium which produces menaquinone-4 and recovering the same.

Ethanol is produced by culturing the microorganism Kluyveromyces cellobiovorus or Kloeckera apiculata in a medium containing, as a carbon source, an assimilable source of xylose, cellobiose or both. The carbon source may be provided in the form of hydrolysates of cellulose containing substances such as cotton, wood, straw or paper which are obtained by acid hydrolysis or enzymatic action. At the completion of culturing, ethanol is removed from the culture in a conventional manner.

Thermophilic aspartase is produced by culturing a microorganism belonging to the genus Bacillus. The enzyme is useful as a catalyst in the production of L-aspartic acid from ammonium fumarate or a mixture of fumaric acid and ammonia.

Citric acid is selectively produced by fermentation of a mutant yeast strain which requires the presence of iron in the culture medium. Citric acid is accumulated in the culture medium and isolated therefrom.
