Poultry carcasses are conveyed on saddles with their breastbone plate facing downwards to a scraping device having left and right scraping elements arranged adjacent to each other to simulate the contour of the approaching poultry carcass. The scraping elements are spaced apart by a signal from the control unit in relation to the individual width of the poultry carcass. Each scraping element has a sinew restraint that finds and restrains the tender sinew located in the region of the body joint, so that the scraping element can pass unhindered into the region between bone and meat and so obtain an optimum yield. A second scraping device, arranged essentially symmetrically to the direction of conveying, has left and right discs that are slidable by pivot levers to move on the corresponding part of the symmetrical wishbone in order to detach the meat connected to the wishbone.

Filleting device

An apparatus for detaching wings from a poultry body is described in which the detachment is effected by means of three pairs of separating tools with varying arrangements and forms of knife blades. The poultry bodies are prepared as front halves and pass through the processing areas of the separating tools fixed on supporting saddles which are moved forward by conveying means and convey the poultry body with the neck portion leading and the breast portion uppermost. This 'three-cut' separation procedure allows an extremely economical detachment of the wing and greatly increases the yield of breast fillet meat while avoiding bone splinters in the region of attachment of the wings.

A holding device for holding gutted poultry carcasses or parts thereof for the purpose of processing during such treatment comprises a support body having a saddle horn, onto which body the poultry carcass, which is present in the shape of front halves or breast caps can be pushed. A clamping device, which can be activated manually or by means of the advance movement of the holding device brings about a secure holding by clamping the corpus sterni in its region between the coracoids by means of a clamping lever. This clamping lever is in an opening position during the loading action so as not to impede the latter.
