Disclosed is a pudding component comprising a conventional instant pudding in granulated form. The granulated pudding component has also been formed into larger sized pieces referred to herein as 'nuggets.' The granules of the pudding component are essentially characterized by the physical features of (1) particle size, (2) bulk porosity, (3) density, (4) initial rates of moisture absorption, and (5) moisture content. The granules are mixed with a heated sugar solution to form a matrix of sugar and pudding granules.

Disclosed are dry mixes for cakes, especially layer type, for the provision of finished cakes having a discontinuous pudding phase. The present dry mixes require no batter mixing or aeration but merely require the addition of measured amounts of water and baking. The present mixes comprise a cake component comprising a conventional full formulation dry mix for cakes in a particular physical form referred to as 'granulated.' Additionally, the mixes comprise a pudding component comprising a granulated form. The granules of both the cake and pudding components are each essentially characterized by the physical features of (1) particle size, (2) bulk porosity, (3) density, (4) initial rates of moisture absorption, and (5) moisture content. For the layer cake component the particle size of the layer cake granules essentially ranges from about 0.9 to 3.0 mm. The bulk porosity essentially ranges from about 0.55 to 0.64. The density essentially ranges from about 0.45 to 0.70 g./cc. The rates of initial moisture absorption essentially range (at 70.degree. F.) from about 0.055 to 0.075 gram of water per gram of mix per second. The moisture content is less than about 5%. For the pudding component, the particle size essentially ranges from about 2.8 to 3.4 mm; the bulk porosity ranges from about 0.50 to 0.65; the density ranges from about 0.5 to 0.7 g./cc; the initial rate of moisture absorption from about 0.060 to 0.080 g. H.sub.2 O/g. mix-sec., and a moisture content of less than about 5%. Conventional agglomeration equipment and techniques employing moisture as the binding agent are useful herein for preparing the granulations of the present invention.

Disclosed are dry mixes for cakes, comprising conventional full formulation dry mixes in a particular physical form. The present granulated dry mixes can be used to prepare finished cakes by conventional baking but without requiring such steps as mixing to form a batter, or batter aeration or coating the baking container. The granulated dry mixes are characterized by the physical features of (1) particle size, (2) bulk porosity, (3) density, (4) initial rates of moisture absorption, and (5) moisture content. The particle size essentially ranges from about 0.9 to 3.0 mm. The bulk porosity essentially ranges from about 0.55 to 0.64. The density essentially ranges from about 0.45 to 0.70 g./cc. The rates of initial moisture absorption essentially range (at 70.degree. F., 21.degree. C.) from about 0.055 to 0.075 gram of water per gram of mix per second.

Preparation of cakes and no-stir dry mix for their preparation

The present dry mixes require no batter mixing or aeration but merely require the addition of measured amounts of water and baking. Conventional agglomeration equipment and techniques employing moisture as the binding agent are useful herein for preparing the granulated pudding and layer cake fractions of the present invention. Providing the pudding component in the form of nuggets overcomes problems of insufficient rehydration in the provision of layer cakes with large pockets of a discontinuous pudding phase.

No-stir dry mix with pudding nuggets for cake with discontinuous pudding

Disclosed are non-dairy dessert compositions suitable for the preparation of soft serve aerated frozen desserts. The compositions comprise from about 25% by weight to about 75% of a whole comminuted fruit puree, from about 0.3% to 1.5% by weight of an acid-stable whipping agent, from about 0.1% to 0.5% by weight of an acid-stable polysaccharide gum, from about 1% to about 15% of a malto dextrin bodying agent, from about 12% to about 28% of a nutritive carbohydrate sweetening agent, and from about 1% to 10% of an edible fatty triglyceride oil. The moisture content of the dessert compositions ranges between about 45% to 75%. After homogenization of the dessert compositions, an aerated frozen, soft serve dessert having a density of 0.2 to 0.95 g./cc. can be prepared in conventional aerated frozen dessert equipment.

Composition for aerated frozen desserts containing uncooked fruit puree

Non-dairy dessert compositions suitable for the preparation of aerated frozen desserts by either commercial agitated freezing or by at-home static freezing. The compositions comprise from about 35% by weight to about 80% of a specially prepared cooked fruit base, from about 0.3% to 1.5% by weight of an acid-stable whipping agent, from about 0.05% to 0.5% by weight of an acid-stable polysaccharide gum, from about 1% to about 15% of a malto dextrin bodying agent, and from about 1% to 10% of an edible fatty triglyceride oil. The moisture content of the dessert compositions ranges between about 45% to 75%.

Composition for aerated frozen desserts containing fruit puree and

Disclosed are dairy based dessert mix compositions which upon aeration can be statically frozen to provide aerated frozen desserts. The dessert compositions essentially comprise from about 15% to 35% of a dry mix fraction and from about 65% to 85% of a concentrated milk blend fraction. The dry mix fraction essentially comprises from about 50% to 70% of the dry mix fraction of a nutritive carbohydrate sweetening agent; from about 3% to 8% of a non-fat dry milk solids; from about 1% to 2% of a whipping agent and from about 0.5% to 2% of a stabilizer gum. The milk blend fraction comprises a concentrated milk blend having from about 1% to 9% fat, from about 17% to 21% non-fat milk solids, from about 0.01% to 0.1% of a stabilizer salt and from about 75% to 64% moisture. The concentrated milk blend has a viscosity of about 20 to 25 cp. (70.degree. F.) and a whey protein nitrogen value of about 1.0 to 1.8. The concentrated milk blend is prepared by forewarming raw milk; concentrating; adding stabilizers, sweeteners and casein reactive gums; heat sterilizing; cooling; homogenizing; further cooling; canning; and aging the milk blend.

Dairy based mixes for frozen desserts and method of preparation

Disclosed are non-dairy dessert compositions which are free of conventional emulsifiers and which are heat shock stable. The compositions comprise from about 50% to 98% of a specially prepared comestible base, from about 0.4% to 4% of an acid-stable whipping agent, from about 0.05% to 0.5% of an acid stable polysaccharide gum and from about 1% to 15% of an edible fatty triglyceride oil. The moisture content of the dessert compositions ranges between 48% and 65%. The comestible base is prepared by forming an uncooked blend comprising from about 25% to 65% by weight of the blend of citrus juice vesicles, from about 7% to 45% of a nutritive carbohydrate sweetening agent, from about 1% to 5% of an ungelatinized starch, from about 0.1% to 0.4% of water-soluble pectin, from about 8% to 60% by weight of water and sufficient non-volatile edible organic acid to provide the blend with a pH between 2.5 and 5.5. The blend is then cooked to a viscosity (190.degree. F.) between 7,000 and 10,000 cp. and a moisture content between 30% to 60%. An aerated frozen dessert is prepared by aerating the mixture of these ingredients to a density of 0.2 to 0.95 g./cc. and then statically freezing the aerated mixture.

Non-dairy, aerated frozen dessert containing citrus juice vesicles

Disclosed are frosting compositions which are substantially free of emulsified oleaginous materials yet exhibit the organoleptic attributes of creme icings. The frosting compositions comprise a comestible base prepared in prescribed manner, and minor amounts of both an acid-stable whipping agent and polysaccharide gum. The comestible base is prepared by cooking a blend comprising citrus juice vesicles, a nutritive carbohydrate sweetening agents, an ungelatinized starch, an edible organic acid to provide a pH between 2.5 to 5.5 and water. The cooking yields a base having a moisture content between 30% to 60% and a viscosity between 7,000 to 10,000 cp. The frosting compositions upon aeration provide frostings having a density between 0.6 to 0.8 g./cc.

Citrus juice vesicle containing frosting compositions and method of

Disclosed are food products in the form of a comestible base which contain major amounts of citrus juice residual juice vesicle solids. The comestible bases are formed by first preparing an uncooked blend comprising (1) 25% to 65% citrus juice vesicles having a moisture content between 89% to 96% by weight of the vesicles, (2) 7% to 45% by weight of a nutritive carbohydrate sweetening agent, (3) sufficient edible non-volatile organic acid to provide the blend with a pH between 2.5 to 5.5, (4) 1% to 5% of an ungelatinized starch, and, (5) 8% to 60% added water. The blend prepared by mixing these essential ingredients is cooked at a temperature of between 180.degree. F. and 280.degree. F. to form the present comestible bases. The cooking step results in the comestible base having a moisture content reduced to 30% to 60% and an increased viscosity of up to 7,000 to 10,000 cp. at 190.degree. F. Consistency of the comestible base is alternatively expressed in Bostwick consistometer values of between 7.5 and 9.5 cm. at 190.degree. F.

Disclosed are intermediate moisture food products which contain major amounts of orange citrus juice vessicle solids. The food products also contain from about 12% to 40% of a carbohydrate nutritive sweetener and sufficient amounts of edible organic acid to provide a pH of about 2.5 to 4.5. The food products have a moisture content of from about 8% to 30% and a water activity ranging from about 0.30 to 0.85. The disclosed food products exhibit prolonged moisture retention and microbial stability.
