The present invention relates to new enzymes with improved properties and to compositions comprising these enzymes suitable for use in the production of a food, feed, or malt beverage product, such as in a brewing process.

Enzymes

Methods are provided for reducing color and/or unpleasant taste and/or malodor development in a composition comprising a plant material, such a cereal bran, in particular during solubilization processes of the plant material. Optimized solubilization methods are provided, wherein color and/or unpleasant taste and/or malodor development is controlled. Solubilized plant material, kit of parts, the use of such solubilized plant material, e.g. in food products or bioethanol are also provided.

Prevention of extract darkening and malodor formation during solubilization of plant cell wall material

The present invention relates to a method for preparing a variant lipolytic enzyme comprising expressing in a host organism a nucleotide sequence which has at least 90% identity with a nucleotide sequence encoding a fungal lipolytic enzyme and comprises at least one modification at a position which corresponds in the encoded amino acid sequence to a) the introduction of at least one glycosylation site in the amino acid sequence compared with the original fungal lipolytic enzyme; b) the introduction of at least one amino acid at a surface position and at a location in an external loop distal to the active site of the enzyme which is more hydrophilic; or c) a substitution or insertion at one or more of positions disclosed herein or a deletion at one or more positions disclosed herein. The invention also relates to polypeptide produced by the method and to novel nucleic acids.

Variant lipolytic enzymes and methods for expression thereof

Polypeptides with xylanase activity modified to increase bran solubilization and/or xylanase activity. The modification comprises at least an amino acid modification i position 110 and may have further modifications of one or more amino acids in position 11, 12, 13, 34, 54, 77, 81, 99, 104, 113, 114, 118, 122, 141, 154, 159, 162, 164, 166 or 175 wherein the positions are determined as the position corresponding the position ofxylanase (SEQ ID NO 1) The polypeptides have at least 88% identity with SEQ ID NO 1 or 75% identity to a sequence selected from SEQ ID NO 2-22.
