High linolenic edible oils such as soybean oil and canola are stabilized by blending the oils with rice bran oil in amounts effective to render the oils stable to oxidation. Preferred embodiments employ from about 0.5% to about 10%, more narrowly from about 2% to about 5%, by weight rice bran oil specially processed to retain unsaponifiable matter. In one embodiment, physically refined rice bran oil is used. The natural stabilized oil is especially useful as a spray oil for crackers, nuts, chips, and other snack products.

Breath freshening, dry pet foods, e.g., pet biscuits are prepared by topically applying a breath freshening amount of a water-soluble zinc salt to a farinaceous-based baked or cooked pet food. The amount of the water-soluble zinc salt is sufficient so that said topically-applied water-soluble zinc salt contains from about 2 mg to about 6 mg of zinc ion per 10 gm of the breath freshening pet food. Consumption of the dry pet food controls the malodorous breath of the animal. Rawhide chew coated in the same manner also provides breath freshening when chewed.

Bloom resistant cookies containing cocoa powder and/or chocolate liquor as a flavoring are produced without lard using a vegetable fat or shortening having a solid fat content of about 2.3% to about 21.6% at 70.degree. F. and about 0.2% to about 11.6% at 85.degree. F. The preferred fats are partially hydrogenated soybean oil, partially hydrogenated cotton seed oil and mixtures thereof. The fats further have an oleic acid content of about 52% to 62% and a combined linolenic acid and gadoleic acid content of 1.2% or less. The cookies exhibit similar color, taste and texture to control samples made with lard without experiencing any fat bloom.

The present invention is directed to water-in-oil and oil-in-water emulsions containing fish oil which are stabilized by enzyme systems which prevents or retards against the deleterious formation of malodorous alcohols and aldehydes thereby eliminating the undesired odor and off-flavor associated with the formation of these organic products. The enzyme system contemplated by the present invention include compositions of (a) aldehyde dehydrogenase plus alcohol dehydrogenase plus nicotinamide adenine dinucleotide (NAD); (b) aldehyde oxidase plus alcohol oxidase plus catalase; and (c) xanthine oxidase plus alcohol oxidase plus catalase.

Deodorized water-in-oil emulsion containing fish oil

The process of treating baked shredded wheat with a solvent spray using a potable solvent, preferably ethanol. The solvent is subsequently evaporated from the treated shredded wheat. The treatment retards the oxidation of the oil in the shredded wheat, which consequentially, substantially slows down rancification of such oil. In this manner, the shelf-stability of the shredded wheat product is significantly extended.

A hot cereal is prepared by treating a cereal grain with a slurry resulting from the treatment of a grain-water mixture with starch-converting enzymes, heating the mixture until the grain is at least partially cooked, flaking the cooked cereal, and, optionally, agglomerating the flakes. It is preferred that the flakes be agglomerated for packaging in single-sized point of sale containers. This cereal has a rich, nutty flavor and when prepared does not have a gummy texture.
