A low sodium salt composition contains NaCl, a bulking agent and optionally a binder. The composition preferably has a density of less than about 0.6 gram/cc and tastes, handles and flows like a table salt.

Analogs of the glycoside stevioside are disclosed. These materials have the formula ##STR1## wherein R is a simple physiologically acceptable noncarbohydrate polar organic group. The analogs are sweet and find use as sweeteners.

Stevioside analogs

Glucosubstituented diterpenoid compounds analogous to stevioside, rebaudosides C and A, steviolmonoside and steviolbioside but having their gluco units substituted with simple monoglycosidic polar groups and optionally having their C.sub.19 carboxyls as simple esters are disclosed. These materials are sweet and do not degrade under mammalian GI tract conditions.

Dihydrochalcones of the formula ##STR1## are disclosed wherein M.sup.+ is a physiologically acceptable cation, X is H or OH, R is a lower alkyl and R' is ##STR2## and n and q, respectively, may have a numerical value of 1 to 6. These materials are useful as sweeteners for edibles.

These materials are useful as sweeteners for edibles. They may be prepared by sulfonating the corresponding amino dihydrochalcone using, for example, catechol sulfate.

Dihydrochalcones of the formula ##STR1## are disclosed wherein X is H or OH and R is a lower alkyl. These materials are useful as sweeteners for edibles. A process for preparing these compounds using a novel intermediate is disclosed as are acid and base neutralization products of the subject dihydrochalcones.

Comestibles sweetened with alpha amino acid dihydrochalcones

Dihydrochalcones of the formula ##STR1## are disclosed wherein X is H or OH and R is lower alkyl. These materials are useful as sweeteners for edibles. A process for preparing these compounds using a novel intermediate is disclosed as are acid and base neutralization products of the subject dihydrochalcones.

Alpha amino acid dihydrochalcones

Dihydrochalcones of the formula ##STR1## derivatizing group, Y is a polar group, X is hydrogen or hydroxyl and R is a lower alkyl, their preparation and their use as non-sugar sweeteners are disclosed.

Sweetener derivatives

Flavanones represented by the formula ##STR1## wherein R is a lower alkyl of from one to three carbon atoms inclusive, n is an integer of from one to three inclusive and M is hydrogen or a physiologically acceptable metal cation, are disclosed. These materials are themselves useful as dietetic sweeteners as well as being direct intermediates for the preparation of useful dihydrochalcone sweeteners.
