Novel sulphur containing food flavor substances are provided containing an oxygen or sulphur atom in a five-membered ring structure, at least one alkyl group at one of the carbon atoms adjacent to the hetero atom and having a keto oxygen and a hydroxy or mercapto group attached to the other carbon atoms of the ring structure.

Flavoring substances

Novel sulphur containing food flavor substances are provided containing an oxygen or sulphur atom in a five or six membered ring structure, one alkyl or hydroxy alkyl substituent at at least either of the carbon atoms adjacent to the hetero atom and having at least one sulphur or oxygen atom attached to another carbon atom of the ring structure.

Addition compounds of 2- or 5-monoalkyl and 2,5-dialkyl-4-hydroxy-2,3-dihydrofuran-3-ones and C.sub.2 -C.sub.9 carbonyl compounds are provided. These addition compounds are useful to impart improved flavoring properties to foodstuffs.

Certain 2-(hydroxyalkyl)-2,5-dialkyl-4-hydroxy-4,5-dihydrofuran-3-ones

A creamy, buttery flavor or aroma with a pleasant note, reminiscent of bread is imparted to foodstuffs by heating them under controlled conditions in the presence of Amadori rearrangement compounds, having a melting point below 170.degree. C, of 6-deoxy-aldohexoses, such as e.g. rhamnose, and alpha-amino acids, such as e.g. proline. Frying and cooking fats, including margarine, comprising these Amadori compounds are also described.

Certain lower alkyl 4,5-dihydrothiophene-3-thiols

Addition compounds of 2- or 5-monoalkyl and 2,5-dialkyl-4-hydroxy-2,3-dihydrofuran-3-ones and C.sub.2 -C.sub.9 carbonyl compounds are provided. These addition compounds are useful to impart improved flavouring properties to foodstuffs.
