Whole single-cell protein cells possessing improved functional properties are obtained by heat treating said cells at a temperature of from about 215.degree. to about 300.degree. F. for from about 30 seconds to about 25 minutes to inactivate invertase.

Heat treatment for single-cell materials and resultant products

Protein containing food products are prepared by a process in which yeast is codried with whey. The codried yeast-whey food is suitable for human foods. Preparations containing yeast-whey product do not have a yeast character or flavor in some food applications.

Co-dried yeast whey food product and process

Improved apparatus for the continuous aseptic growth of single-cell protein materials, employing an aqueous ethanolic substrate fortified with nutrient elements, preferably under oxygen limited conditions. The fermentation is conducted under conditions which afford effective means of attaining high rates of oxygen transfer and heat removal coupled with intense agitation.
