Disclosed is an intrinsically stable shirred, tubular, single-layer or multilayer food casing that preferably has a sigma-5 value (longitudinal/transversal, measured in a moist state) of less than 20/20 N/mm. Said casing is preferably shirred at a ratio of 100:1 or more, preferably 120:1 to 500:1, and is essentially made of synthetic polymers. The shirred casing can be stored and transported without using a net-type envelope and is particularly suitable for processing on fully automatic sausage stuffing, portioning, clipping, and twisting devices.

An apparatus for stuffing a pasty food that includes an applicator sleeve arranged between the inlet end and the outlet end of a stuffing tube. At least a portion of the applicator sleeve surrounds the stuffing tube about part or its complete circumference and the applicator sleeve supplies one or more strips coated and/or impregnated with transferable additives to the stuffing tube, with the strips being ultimately applied to the pasty food. The innovation further relates to a foodstuff in a tubular casing (e.g. sausage skin), in which at least one strip is arranged between the foodstuff and the surrounding casing, the strip being coated and/or impregnated with at least one transferable additive.

The invention relates to a tubular food wrapping made of an absorbent material that is imbibed with colorants and/or flavorings which can be transferred to a food item placed in the wrapping. The inventive food wrapping consists of a textile envelope, preferably comprising a longitudinal seam. Also disclosed are a method for producing said wrapping and the use thereof.

Disclosed is a shined tubular food casing based on a thermoplastic blend of at least one polyamide and/or copolyamide and at least one hydrophilic component. The casing is biaxially stretch-oriented and impregnated on the inside and/or outside with a component which allows the pleats which are formed during shining of the casing to adhere to each other. The component preferably comprises at least one polymer. The casing is preferably shirred at a ratio of 80:1 to 500:1. The inventive shined casing is particularly stable from a mechanical perspective and can therefore be used especially for the production of cooked sausages, scalded-emulsion sausages, and small sausages on fully automatic sausage stuffing and clipping apparatuses.

The present invention relates generally to a shirred concertina formed from a seamless, tubular foodstuff casing that is tied-off at one end, and has an outer surface provided with a coating or impregnation including a food additive. The tied-off end of the present casing is turned back inwardly, into the hollow cavity formed by the concertina. Concertinas of the present invention are particularly adapted for use with automatic sausage filling, portioning, and clipping machines.

The invention relates to a single- or multilayer shirred stick packaging casing in the form of a shirred stick based on synthetic or natural polymers which has a high shirring density of up to 1:500 at a length of the shirred stick of from 10 to 200 cm, and to a process for producing the packaging casing.

The invention relates to a tubular food casing, one surface of which has a continuous layer which is solid under standard conditions of temperature and pressure, prepared from a mixture made from a wax solid under these conditions and/or from a wax-like component, from a liquid smoke, and from an emulsifier with the aid of which a stable water-in-oil emulsion can be formed. The layer adheres firmly to the casing and is also flexible, so that the outer side of the casing can be turned inside out without difficulty. When the sausages produced therewith are cooked or scalded, the wax or the wax-like component melts so that the liquid smoke can migrate onto the surface of the meat emulsion and there produce the desired characteristics of smoking.

An apparatus 17 for continuously forming rings of thermoplastic, shrinkable tubular casings 1 includes an unwinding roller 20, a first pair of pinch rolls 2, a ring-forming tool 3, a second pair of pinch rolls 15 and a winding-up roller 21. The tubular casing 1 is passed from the unwinding roller 20 through the pair of pinch rolls 2 and runs along a running-zone A into the ring-forming tool 3, which includes a spiral 19 and guide rollers 7 and 8 on an outer side 5 and an inner side 6, respectively, of the tubular casing 1 as well as a heater 4 for generating hot air. After covering a running-out zone B, the ring casing 16 leaving the ring-forming tool 3 runs through the second pair of pinch rolls 15, which pinches off the gas blown in at low gauge pressure in the section of the tubular casing 1, or of the ring casing 16, between the first pair of rolls 2 and second pair of rolls 15, with the result that said gas remains only in the section mentioned. The ring casing 16 is laid flat along its center line of the ring by the second pair of pinch rolls 15 and is wound up in this state onto the winding-up roller 21, in order then to be shirred and filled in a further step of the process.
