Crystallization of glucose in compositions such as high fructose corn syrup or honey is reduced by adding as little as 0.25% by weight of inulin. The addition of inulin to honey reduces stickiness and increases the viscosity to allow the sweetener composition to retain its shape when molded. A honey and inulin composition can be added to chocolate without separation. A honey and inulin composition can be mixed with powdered milk without separation.

A composition containing at least one polyol and certain amounts of inulin relative to the at least one polyol, characterized by a reduced tendency of the at least one polyol to induce acute diarrhea. The at least one polyol may be, for example: xylitol, sorbitol, maltitol, mannitol, isomalt, isomaltitol, lactitol, hydrogenated starch hydrolysates (HSH), glycerol, propylene glycol, erythritol, galactitol and combinations thereof. The process for preparing the novel inulin products includes extracting inulin with water from subdivided plant materials, holding the inulin rich extraction water in a settling tank while maintaining the temperature from about 0&deg; C. to 7&deg; C. which causes higher molecular weight polysaccharides to separate from water soluble lower molecular weight polysaccharides, and separating the higher molecular weight inulin fructose fractions from the more water soluble lower molecular weight inulin fractions.

Processes for making novel inulin products

Novel fractions of inulin are disclosed which have improved water solubility and/or water miscibility at ambient temperatures. The novel fractions are extracted from plant materials containing inulin and have molecular weights below about 2288. The process for preparing the novel fractions includes extracting inulin with water from subdivided plant materials, holding the inulin rich extraction water in a settling tank while maintaining the temperature from about 0&deg; C. to 7&deg; C. which causes higher molecular weight polysaccharides to separate from water soluble lower molecular weight polysaccharides, and separating the water soluble fractions from the higher molecular weight inulin fractions.

Inulin fractions

Novel liquid food products are disclosed which contain water, and inulin fractions having at least about 75% by weight of polysaccharides extracted from inulin-containing plant materials in which the polysaccharides have molecular weights in the range from about 2288 and below. The food products also may contain sweeteners, for example, artificial sweeteners, such as aspartame, saccharin, sucralose, or one or more of the polyols.

Processes for extracting three sugars, fructose, sucrose and glucose, from dates are disclosed. Pitted dates are frozen and subdivided into particles. The particles are contacted with a heated water solution to extract the sugars from the date fibers. The sugar enriched water solution is separated from the date fibers by passing the water solution through one or more milli-screens. The sugar enriched water solution may be purified, and also may be treated to reduce the water content. The sugar solution containing the three sugars is a novel food product which can be used as a sweetener, for example, for sweetening soft drinks. Alternatively, the liquid product may be freeze-dried, vacuum oven-dried or spray-dried to produce a novel solid product containing the three sugars. The date fibers are dewatered, and admixed with ground date seeds to produce another novel food product.

The milli-screen openings may be kept open for the passage of liquids with specially-designed wipers and/or back-flushing from a liquid compartment and/or rotation of the milli-screen past the matrix of subdivided solids, the subdivided solids themselves acting as a screen cleaner. The invention is useful in batch or continuous diffusers for extracting soluble solids from subdivided solids containing small particles and fines.

Processes for extracting sugars from dates and for making novel food

There is disclosed method and apparatus for cleaning roots, tubers, bulbs, and the like, for example, sugar beets, chicory, Jerusalem artichokes, dahlia, potato, and onions (hereinafter 'articles'). In the apparatus, spaced horizontal rollers have helices on their cylindrical surfaces which scroll the articles laterally to the ends of the rollers where they are deposited on a slide that removes them from the cleaner, or, optionally, returns the articles to the cleaner at strategically located lower positions for stalk removal and/or leaf stripping, or for other desired cleaning. The first sets of rollers are designed to separate small chips, small stones and loose soil from the articles. The next sets of rollers are designed to remove adhering soil and/or mud, weeds, and larger stones. Strategic placement sizing, rotational speed, and direction of rotation of the helices on the rollers are instrumental in removing leaves, stalks, weeds, breaking up dirt clods and mud balls, and cleaning of the articles. A collector for stones and chips is located at the ends, and between pairs, of all rollers. The stone and chip collectors have an adjustable opening for receiving stones and chips, but rejecting the articles. Separation of rocks or stools from the articles is accomplished by increasing the slope of the cleaning apparatus to where the rocks and stools go straight down the screen and the articles are carried to the sides of the cleaning apparatus.
