Spray dried nutritional powders include soluble calcium, protein, and at least one of a soluble citrate, a soluble phosphate, and combinations thereof as at least one chelating agent. At least a portion of the soluble calcium is calcium HMB. At least a portion of the protein is soluble protein. The spray dried nutritional powders have a weight ratio of soluble calcium binding capacity to total soluble calcium of from about 2.3:1 to about 12:1. The calcium HMB, the at least one chelating agent, and the protein are spray dried together.

Method of preparing a nutritional powder comprising spray dried HMB

Disclosed are nutritional emulsions comprising fat, carbohydrate, protein, and calcium HMB, wherein the nutritional emulsion has a weight ratio of a soluble calcium binding capacity to soluble calcium of from about 2.3 to about 12.0. Also disclosed are nutritional emulsions comprising fat, carbohydrate, protein, and calcium HMB, wherein the nutritional emulsion comprises less than 900 mg/L of soluble calcium in a weight ratio of calcium HMB to soluble calcium of from 6:1 to 15:1. The nutritional emulsions are surprisingly stable and generate minimal or no bitter flavors or after taste over time.

Nutritional emulsions comprising calcium HMB

Disclosed are nutritional compositions comprising a peroxide-treated aseptic package and a nutritional liquid contained therein, wherein the nutritional liquid comprises beta-hydroxy-beta-methylbutyrate (HMB) and at least one of fat, carbohydrate, and protein. The HMB provides a buffering effect in the nutritional liquid to thus minimize an acidic pH shift that is prevalent in aseptically sterilized packages, and thus helps maintain product stability over time.
