A process for controlling the particle size distribution of a particulate meat analog formed from a wet, agglomerated textured protein during continuous heat-setting of the protein is disclosed. The improvement in the continuous heat-setting, preferably by continuous frying, of textured protein comprises feeding the wet agglomerate as particles to the heat source, e.g. a fryer, as a continuous layer of constant bulk density and thickness. The agglomerate is placed on a continuous belt within the heating unit via a feed belt. The particle size distribution of the wet analog and thus the heat-set analog is controlled by the ratio of the continuous heat-setting unit belt to the feed belt speeds.

A rigid composite body containing crystalline molecular sieves and having liquid-permeable channels extending in a substantially vertical direction from one surface of said body to the interior thereof, preferably to an opposite surface, is charged with carbon dioxide so that when brought in contact with water or an aqueous beverage, the carbon dioxide will be released from the molecular sieve composite body to carbonate the solution. Such rigid, composite bodies are secured in a sealable, nestable, stackable container which provides a convenient and efficient means for dispensing such composite bodies in combination with a dry instant beverage mix for the preparation of carbonated beverages upon the addition of water.

A process of making meat analogs which comprises forming a dry protein mix, adjusting the moisture content of the dry mix to form a dough-like protein wet mix, sheeting the protein wet mix to form a coherent workable protein dough sheet, cutting the sheet to form fiber-like strands, aggregating the strands into a desired fiber alignment, preferably coating the aligned fibers with an edible binder material, and stabilizing the fibers to form a coherent fiber mass closely resembling meat in appearance, texture, and eating quality.

A potato chip product and process wherein a dough is prepared from dehydrated cooked potatoes and water and subsequently fried. The dough has an iodine index of from about 0.01 to about 6 and a lipid content of from 0 to about 6%, by weight.
