The present invention relates to a food-cooking surface for a kitchen utensil or cooker, characterized in that the cooking surface is a coating containing at least 30% niobium. Advantageously, the coating contains zirconium or titanium, with a content of less than 70%.

The food cooking surface is made of a metal alloy of zirconium and of at least another metal, the zirconium content is not less than 75 wt %. In accordance with one embodiment of the invention, the alloy contains less than 10 wt % of elements added to zirconium.

The invention is characterised in that the cooking surface is a metallic compound containing, by weight, at least 50% cobalt and at least 18% chrome. A cooking vessel produced from a disc (3) of light alloy or metal includes a bottom (1) intended to be placed on a cooking plate, a burner or the like. The bottom (1) includes a plate (2) made of a metal having properties different from those of the metal of the disc (3). This plate (2) is completely or partially embedded in the bottom (1) and its periphery is preferably adjacent to a groove (4). The bottom of such a cooking vessel exhibits improved resistance to deformation.

A process for the preparation of a metallic surface permits securing a coating to this latter. The process comprises etching on a matrix (11) of hard metal a series of relief designs (12) separated by empty spaces (13). The etching has the effect of creating microcavities (15) in the metal adjacent to the empty spaces (13). The matrix (11) is applied by pressing to a disc of metal softer than that of the matrix (11) to impress the relief designs (12) and the microcavities of the matrix on the disc. The process is particularly useful for the production of a stamped cooking utensil.

Cooking vessel provided with an imperforate base (6) having a face (6a) adapted to be exposed to a heat source (2). This face has a series of substantially radial grooves (7) and is substantially free from non-radial grooves. The depth of the radial grooves is within the range of one-quarter to one-half the thickness of the vessel base (6).
