An apparatus and method for separating the leaner portions of meat trimmings and sparse lean from the fattier portions using an automated system that segregates product based on fat content. One implementation of the method and apparatus includes a piston pump that pushes product through a reduction chamber and on through a feed line and nozzle inlet. The nozzle inlet injects a portion of product into a plurality of product chambers positioned at an outer perimeter of a rotating wheel such that as the wheel rotates, the product chambers revolve about a central axis of the wheel. When the product chamber is adjacent the nozzle, product is injected into the chambers and as the wheel continues to rotate. Another implementation is a method and apparatus including a reduction station; a trim sorter station; a storage bin station; and a plurality of conveyor systems including a dispersion conveyor system extending between the reduction station and the trim sorter station and a sorter conveyor system extending between the trim sorter station and the storage bin station.

Apparatus and method for lean recovery

An embodiment of the invention includes a stuffer horn with spray system for elimination or reduction of pathogen contamination. One embodiment of the invention combines a stuffer horn with spray nozzles for the application of a safety intervention solution while the product is being placed into a bag. The stuffer comprises a horn with pivoting top jaw and fixed bottom jaw that funnels product into a bag that is placed over its nose and a cylinder that forces the product through the horn and into the bag. One implementation can include a cylindrical horn having a flexible overlapping side wall adapted to increase or decrease the inner diameter.

A system and method that is adapted to remove portions of a neck-bone that are useful for meat recovery systems. These most useful portions of the neck bone structure are the outer edges distal from the core of the bone that have meat attached to them. The useful portions on the outer edges distal from the core can be safely removed and subsequently processed in downstream processes such as mechanical separators (bone cannons) or hand trimmed. The overall system contains series sub systems to process neck-bones. The subsystems includes, a Product Infeed; a Chain Drive System; a Cutting Apparatus; a Cat Chain; a Core Extractor System; and a Conveyor Washing System.
