The subject of the invention is the use of an extract ofin combination with a salt, for masking the bitterness of bitter compounds in cosmetic or dermatological compositions. This mixture of sweetener with a second gustatory agent makes it possible to mask the bitterness of the compound permanently without changing the nature of the fragrance or the colour of the composition.
