Abstract

This invention is directed to a process for cleaving glycoside residues from stevioside to produce steviol using a commercially available enzyme mixture containing pectinase, CYTOLASE PCL5®. In preferred methods, the reaction takes place in the presence of a yeast culture. Also described are combinations ofenzymes and CYTOLASE PCL5®.
