Abstract
The present disclosure relates to a process for pre-treating rawcomprising at least one allergenic activity substance, which comprises reactingwith a probiotic microorganism containing one or more cinnamoyl-esterase activity enzymes to obtain a semisolidderivative substantially without or impoverished of allergenic substances.
