Abstract
The present invention is directed to methods and systems of producing neoagarobiose, useful in whitening melanoma cells and in cosmetics, using polypeptides having neoagarobiosebiohydralase activity, including Aga86E from. The reaction can be enhanced by including other agarases, including Aga16B, also from
