Abstract

A process of selectively degrading fatty acids in fat-containing waste materials without significant degradation of triglycerides, thereby converting otherwise economically burdensome waste materials into valuable products, involves contacting a fat-containing waste comprising triglycerides and fatty acids with a bacterial culture comprisingbacteria capable of degrading fatty acids into water and carbon dioxide, and wherein the bacterial culture is substantially free of microorganisms capable of producing extra-cellular lipase in an amount that would cause significant degradation of the triglycerides.
