Abstract
Stable and active arabinitol dehydrogenases (LAD) fromand mutants thereof are disclosed. Arabinitol dehydrogenases are useful in the production of xylitol and ethanol from an arabinose containing substrate. Recombinant and heterologously expressed arabinitol dehydrogenases are useful in converting biomass into biofuels and other industrial food products.
