A &bgr;-primeverosidase gene characterized by encoding a protein containing the amino acid sequence represented by SEQ ID NO:1 in the Sequence Listing or an amino acid sequence derived from this sequence by deletion, substitution, insertion or addition of one or more amino acids and utilization thereof.
