Abstract

The subject of the invention is a composition for stabilizing a non-milk drink, in particular a drink based on fruits and/or vegetables, comprising insoluble components, the said composition comprising a combination of a pectin and of an alginate in which the ratio of the amount of methylated galacturonic acid (MGA) units of the pectin to the amount of guluronic acid (G) units of the alginate is between 0.30 and 0.70. The invention also relates to a process for the preparation of such a stabilized drink.
