Abstract

The invention relates to a method of producing a high-monoester sucrose higher fatty acid ester with a monoester content of at least 90%. In accordance with this invention, a sucrose higher fatty acid ester which is actually a mixture of the corresponding monoester, diester, triester, etc. is dissolved in 1 to 12 parts by weight of a solvent having a specific inductive capacity, at 25.degree. C., of 30 to 50 at an elevated temperature, the precipitate formed on subsequent cooling is removed to recover a supernatant and the solvent is removed from the supernatant. In accordance with the invention, a high-monoester sucrose higher fatty acid ester can be produced easily and with good reproducibility.
