Abstract

A mannitol oxidoreductase is isolated from vascular plants which is NAD.sup.+ dependent and which converts mannitol to mannose. A preferred source of the mannitol oxidoreductase is Apium graveolens, particularly Apium graveolens L. var. rapaceum (Mill.) Gaud. (celeriac) and Apium graveolens L. var. dulce (Mill.) Pers. (celery). DNA encoding of the mannitol oxidoreductase may be used in the production of the enzyme.
