Abstract

A process for flavoring edible nuts which comprises: roasting the nuts at about 138.degree. C. to about 200.degree. C. for about 4 minutes to about 12 minutes; partially cooling the nuts to a temperature of about 56.degree. C. to about 92.degree. C.; applying a volatile flavoring agent to the partially cooled nuts and blending the nuts until the flavor agent is absorbed by the nuts; cooling the nuts to room temperature; and recovering the flavored nuts.
