Abstract
A process for producing a bean cake which comprises feeding whole or hulled grains of beans to a twin-screw extruder, extruding the beans through the twin-screw extruder at a temperature in the range of 90.degree. to 250.degree. C. to form a cake, and while extruding, adjusting the moisture content of the beans to be treated to the range of 8 to 50 weight percent and swelling the starch component while texturizing the protein component of the beans.
