Abstract

Soils containing free or combined organic acids are removed from surfaces, such as oven surfaces, by contacting the soil at a temperature of 250.degree.-550.degree. F. with a weakly alkaline composition comprising (A) at least one polyhydric alchol or a lower aliphatic ether or ester thereof having at least 2 free hydroxy groups, (B) 1.0 to 500% by weight of at least one alkali metal bicarbonate based on the weight of the polyhydric alcohol and (C) 5.0 to 1000% by weight of at least one alkali metal salt of a weak organic acid based on the weight of the polyhydric alcohol, and then removing soil residue.
