A method of making a drawing on a chocolate by causing a pulsed laser to irradiate the surface of a solid chocolate under limited operation conditions, and a chocolate manufactured by said method are provided. The irradiation energy per pulse and the irradiation energy per sweeping unit line length of the pulsed laser are limited to a certain range. The trace of the laser irradiation remains circular or arc-shaped on the surface of the chocolate manufactured under the above conditions. Further, the method makes a drawing on the surface of the chocolate, using the phenomenon that chocolate changes color when being irradiated by a pulsed laser under the above operation conditions.

Chocolate drawing method

It is intended to provide a dry fractionation method for fat whereby the performance for fractionating a fat into a high-melting fraction, a medium-melting fraction and a low-melting fraction can be improved to thereby preventing, in particular, the medium-melting fraction from worsening of the melting properties in the mouth and a decrease in the melting point with the passage of time and, in its turn, improving the melting properties in the mouth of a chocolate product which is produced by using the thus obtained hard butter for chocolates, etc. A method of fractionating a fat wherein a fraction (in particular, a medium-melting fraction) obtained by dry fractionation is efficiently separated from a high-melting fraction and a low-melting fraction mixed therewith. More specifically, a dry fractionation method which comprises heating a crystal fraction containing a large amount of 1,3-disaturated-2-unsaturated triglycerides to thereby melt the 1,3-disaturated-2-unsturated triglyceride components followed by solid/liquid separation of tri-saturated triglycerides as a crystal fraction, thereby achieving a favorable performance of fractionating 1,3-disaturated-2-unsaturated triglycerides and saturated triglycerides.

Dry fractionation method for fat

It is intended to provide a procedure for, in the fractionation of vegetable butter, transesterified fat or oil, isomerized hydrogenated fat or oil, etc. without the use of solvents, obtaining high-concentration component G2U (defined below) by concentrating operation through reduction of the amount of liquid component residue in crystal portion. There is provided a method of dry fractionation of fat or oil characterized in that fat or oil (A) containing components G2U and GU2 is fractionated through crystallization/solid-liquid separation into crystal fraction of concentrated G2U (AF) and liquid fraction of concentrated GU2 (AL), subsequently this crystal fraction (AF) is mixed with liquid G2U-containing fat or oil (B) whose GU2 concentration is lower than that of the liquid fraction (AL) and thereafter the mixture is separated into crystal fraction (BF) and liquid fraction (BL). Provided that G represents a saturated or trans acid form fatty acid residue; U a cis form unsaturated fatty acid residue; and G2U a triglyceride of G2-residue and U1-residue bonded together.

Method of dry fractionation of fat or oil

A method of solvent fractionation of a fat by which a high fat concentration, a rise in refrigerant temperature, and a reduction in operation time, etc. can be attained and fractions are efficiently produced at a low cost, characterized by rapidly cooling a feedstock fat dissolved in a solvent to a temperature higher by 1 to 20&deg; C. than the crystallization temperature used in a crystallizer in the step prior to introduction of the feedstock fat into the crystallizer.

Method of solvent fractionation of fat

A process for dry fractionation of fats and oils, by providing a fat-and-oil feedstock having an SFI at 20.degree. C. of at least 15; pre-cooling the fat-and-oil feedstock to a temperature of, at the highest, 3.degree. C. higher than that of a cooling medium to be used for crystallization; allowing the pre-cooled fat-and-oil feedstock to stand while further cooling the feedstock with the cooling medium to form fat crystals and to obtain cakes containing fat crystals; and subjecting the cakes to separation of solids from a liquid phase.

Process for dry fractionation of fats and oils

An apparatus for formation of fat crystals by standing, which has a container, distribution pipes and crystallization trays arranged in parallel, the container being divided into plural compartments with vertical partitions each upper part of which has an opening to permit a fat-and-oil feedstock to be fed into each compartment, the compartments communicating with each other at a certain height from the bottom of the container so that the fat-and-oil feedstock can be uniformly fed into respective compartments, and the distribution pipes being connected to the bottoms of respective compartments so that the fat-and-oil feedstock to be fed therein can be distributed to the crystallization trays, respectively.

Apparatus for dry fractionation of fats and oils

A method for refining and fractionation of palm oil is disclosed. In this method, palm oil or palm fractionated oil which has been treated by physical refining is treated with an adsorbent, followed by subjecting it to dry fractionation. An apparatus for refining and fractionation of palm oil comprising means for treating palm oil or palm fractionated oil with an adsorbent and dry fractionation means connected thereto is also disclosed.

Method for refining and fractionation of palm oil and apparatus therefor

A method for dry fractionation of a fat or oil wherein a non or less-laurin fat or oil is cooled and then fractionated into a solid fraction and a liquid fraction, said method comprising cooling the fat or oil in an apparatus having cooling means to crystallize it in a desired crystallization degree, then crushing it physically to fluidize it, and then pressing or filtering it to fractionate into the crystalline solid fraction and the liquid fraction.
