Described is a fat or oil composition which comprises at least 35 wt % of a diacylglycerol, the constituent fatty acids of said diacylglycerol satisfying the following equation: (an amount of a cis-form unsaturated fatty acid)/(an amount of a saturated fatty acid+an amount of a trans-form unsaturated fatty acid)&#x2267;6, the usual intake of which as an edible oil makes it possible to reduce arteriosclerotic factors in blood, leading to the prevention of arteriosclerosis, and furthermore, various degenerative diseases.

Fat or oil composition

Abstract Provided is an oil/fat composition comprising 60 to 100 wt. % of a diglyceride wherein the diglyceride has, as the fatty acid constituent thereof, 15 to 90 wt. % of an &#x3c9; 3-unsaturated fatty acid having less than 20 carbon atoms and a cis &#x3c9; 3-unsaturated fatty acid/(cis &#x3c9; 6-unsaturated fatty acid+saturated fatty acid+trans unsaturated fatty acid) at a weight ratio of 1 to 6. The composition is excellent in visceral fat burning property, body fat burning property and stability against autoxidation.

Oil/fat composition

Provided is an oil/fat composition comprising 10.1 to 94.9 wt. % of a triglyceride, 0.1 to 30 wt. % of a monoglyceride and 5 to 59.9 wt. % of a diglyceride which has, as a fatty acid constituent thereof, 15 to 90 wt. % of an &#x3c9;3-unsaturated fatty acid having less than 20 carbon atoms. The oil/fat composition of the present invention has excellent heat stability, has body-fat-accumulation resisting action, visceral-fat-accumulation resisting action, blood-sugar-level lowering action, insulin resistance improving action and leptin lowering action and is useful for, as well as pharmaceuticals, preventive or remedial food for diabetes or obesity, and feed.

A method of the concentration of acidic phospholipids is disclosed, which comprises a first step wherein lecithin originating in a plant is treated with a solvent containing from 85 to 100% by weight of a lower alcohol and then eliminating the solvent fraction containing said lower alcohol to thereby give a phospholipid mixture, and a second step wherein said phospholipid mixture is treated by using an aqueous solution containing 75% by weight or less of ethanol. In the method of the present invention, the water-soluble components contained in the phospholipid mixture obtained in the first step are efficiently removed in the second step. Thus a lipid mixture containing acidic phospholipids at a high concentration can be relatively easily obtained from the lecithin originating in a plant. This lipid mixture is useful as an emulsifier or a taste modifier.

The present invention relates to a protein-lipid complex which modifies the taste of a food, pharmaceutical or cosmetic, particularly has the effect of decreasing the bitterness thereof; and a method for modifying the taste of a food, pharmaceutical or cosmetic with the complex, particularly a method for decreasing the bitterness thereof with the complex.

Taste-modifying method and bitterness-decreasing method

A bitterness-relieving agent which comprises an ester of a mono- or diglyceride with a polycarboxylic acid or a salt of the same, and a medicinal composition for oral use, a food, a cosmetic and a feed containing this bitterness-relieving agent. Because of being excellent in the effect of relieving bitterness, the bitterness-relieving agent of the present invention can be used in medicinal compositions for oral use, foods and cosmetics having bitter taste.

A method for suppressing a bitter taste of material to be placed in mouth or in contact with mouth, such as foods, drinks, pharmaceuticals, comprises adding an acidic phospholipid or an acidic lysophospholipid to the material.
