The invention belongs to the field of bioengineering and food technology, and discloses a method for enzymatic resolution of chiral substances, including the following steps: (1) preparing an enzyme solution with a lipase concentration of 1-3000 U/mL, and adding a soluble salt, a hydrophilic solvent and a hydrophobic solvent to the enzyme solution to form a three-liquid phase system; the hydrophobic solvent contains esters or amide compounds composed of racemic chiral compounds; (2) subjecting the three-liquid phase system to enzyme-catalyzed reaction under stirring condition; after the reaction is completed, standing or centrifuging the three-liquid phase system to divide it into three layers, which are a upper liquid layer, a middle liquid layer and a lower liquid layer from top to bottom. The optically pure chiral product after hydrolysis is mainly rich in the middle liquid layer or the lower liquid layer, while the upper liquid layer product is another ester or amide product containing an optically pure chiral product. The method has the advantages of low energy consumption, high raw material utilization rate, and mild reaction conditions, and solves the problems of low chiral resolution efficiency, poor chiral selectivity, low recovery rate, and difficulty in industrialization in the existing enzymatic method.

Method for enzymatic resolution of chiral substances

An enzymatic deacidification method for partial glyceride lipase and PUFA-rich oil, comprising the following steps: 1) mixing a polyunsaturated fatty acid (PUFA)-rich oil with a non-polar organic solvent and a short-chain monohydric alcohol, adding an immobilized partial glyceride lipase to carry out an esterification reaction, wherein the partial glyceride lipase is a mutant obtained by mutating the Phe at the 278th position of Lipase SMG1 as Asn; 2) recovering the immobilized enzyme, and recovering the organic solvent and the monohydric alcohol so as to obtain a deacidified PUFA-rich oil. The partial glyceride lipase does not catalyze alcoholysis of triglyceride and like side reactions, has high deacidification efficiency, low reaction temperature, prevents high temperature oxidation of PUFAs, and the immobilized enzyme may be recovered and reused repeatedly, and thus the present invention has good application prospects in industry.

Method for enzymatic deacidification of polyunsaturated fatty acid-rich oil

An enzymatic method for preparing glyceryl butyrate, comprising: (1) carrying out an esterification reaction between n-butyric acid and glycerol using lipase as a catalyst, ethyl acetate and/or ethyl formate as an additive; (2) separating the reaction product, recovering the additive by distillation under reduced pressure to obtain glyceryl butyrate. The invention uses lipase as a catalyst to catalyze the esterification reaction of n-butyric acid and glycerin at normal temperature and normal pressure, reduces the energy consumption of the reaction. Also, the reaction condition is mild, no side reaction happens, and no water-carrying agent is used. In addition, the additive increases the catalytic efficiency of the lipase and the conversion rate of butyric acid.
